Corn Tortilla Quesadillas (simple version)
INGREDIENTS:
Corn Tortillas
Oaxaca Cheese (Mozzarella cheese works fine too!)
Salsa Wallito Verde , Chipotle or Siete
INSTRUCTIONS:
Heat a large skillet (cast iron works great) on medium high heat.Place tortillas it in the pan. Flip the tortilla over a few times, 10 seconds between flips. Air pockets should begin to form within the tortilla. When pockets of air begin to form, take a handful of grated Oaxaca or Mozzarella cheese, sprinkle over the top of the tortilla, making sure that the cheese does not land on the pan itself. Add a Tbs of the salsa so it melts in the cheese, Fold in half, flip a few more times just so the cheese melts.
